I actually like Jimmy's covers of the Dead. As far as the Dead Originals, lol, the Dead were are a live act, not a studio band. There are easily dozens of different versions of Uncle John's Band, and Scarlett Begonias performed by the Dead. If you really want a feel for how these songs were intended...
