Stayed in Maui a few years back, up the coast on Kaanapali Beach, and the best day I had was taking a sailing/snorkeling tour with Trilogy out of Lahaina, which even if you don't take the trip, Lahaina is a great place to spend a half day or more just snooping around and it's only about a half hour ...
