Didn't the Beach Boys play in one of those beach movies?
They did play in a Disney movie that also starred Annette Funicello ("The Monkey's Uncle"), but it was part of the 'Merlin Jones'/Meedvale College series and wasn't a 'beach movie' as such — maybe that's the one you're thinking of?

Dick Dale and the Deltones were in a couple of the Beach Party movies and I think The Hondells were in at least one.....

Someone else brought up Dean Martin; he had a non-singing role as the pilot of the suicide bomber's targeted jetliner in one of the first 'disaster' movies, "Airport" (1970).
And Jimmy Buffett also played the pilot of the air-cargo plane in the film version of Michael Crichton's "Congo" (1995).
