Made Bourbon Street Chicken last night

Post by smiller »

Sorry, no pics to show of the end product as it did not last very long. It was easy to make and extremely good.

3 pounds of boneless/skinless chicken breast cut into bite size pieces
1/2 teaspoon heaping of crushed red pepper flakes
2 tablespoons of olive oil
2 garlic cloves crushed
1/2 teaspoon of ground ginger
1/3 cup of brown sugar
1/3 cup of apple juice
2 tablespoons of ketchup
2 tablespoons of apple cider vinegar
1/2 cup of soy sauce
1/2 cup of water
1 ounce of bourbon
3/4 tablespoon of corn starch to thicken

Heat the oil and brown the chicken pieces in a large skillet. Remove when they are browed, but not fully cooked.

Add all remaining ingredients, except the corn starch, to a bowl and mix together. Pour one extra ounce of bourbon and drink it. I used Makers Mark. Pour the mixture from the bowl into the skillet. Bring to a boil. Add the chicken to the sauce. Reduce the heat and simmer for 25 minutes. Add the corn starch at the end if you want to thicken the sauce.

Serve over rice.

This fed 5 adults and there was just a little left over.
I'll be making this again soon.
