Now I'm hungry for Fajita's (which we haven't had in I can't remember how long)
On August 18th, National Fajita Day recognizes the sizzling deliciousness of the savory Tex-Mex flavor found in fajitas.
In the early 1930s, Mexican vaqueros in Southwest Texas developed what we’ve grown to love all over the United States. Using throwaway cuts of beef, they developed the fajita. However, it wasn’t long before they became a staple in the region. These cowboys cooked the steak over an open fire or grill. Once cooked, they served it with flour or corn tortillas. In later years, fresh Pico de gallo, guacamole, and southwestern spices elevated the fajita. Soon the convenient meal for hardworking cowboys made an introduction to new audiences. The fajita became a destination food in the culinary world.

It's funny, I really like fajita's but rarely order them when I go to a Mexican restaurant. I think it's because as far as I know they always bring you all your ingredients separately for you to throw together. I'm lazy & don't want to have to assemble my dinner at a restaurant. Just bring it No Assembly Required please!

Yeah, our locksmith quit a few years ago.
I'm doing okay... Mom passed away on the 6th, so getting through that.
How's the kid doing? In high school yet? I miss you too, granddaughter..
If we're being honest I think we all had copies of the keys and we collectively lost them nearly 22 years ago

My "Ginger Terror" just started 3rd grade...he is 9 going on 30. Not sure where he gets it from because we all know how much of an Angel I am

I was off today and started the morning talking to the middle daughter for a couple of hours. She's not sure where she's going to be heading next but she only has a month left on her Colorado contract.
Then I started putzing around by stripping the spare bed and washing the linens and quilt and I cleaned the coffee maker. Waiting for Bryan to get home and I'm not making fajitas but I am going to try a new recipe called Taquito Enchilada casserole. Calls for refried beans, enchilada sauce, taquitos and cheese. I'm going to add some cilantro, green onion, green chilies and jalapenos and serve with diced tomatoes and sour cream.
Fajitas?! ... YUM!
I wish I logged in before hitting the grocery, because now I want to make fajitas... WITH peppers and onions, love both!
Oh, well... there is always next week!

I had tacos at World of Beer and they wound up being free. I knew I had $5 in my rewards account that expired today but I had another $5 that expires Sept. 1 - $10 in rewards and the tacos cost $9.99 so I still have $0.01 left to spend by 9/1.
