In terms of Jimmy covering James Taylor's Lighthouse, it was in heavy rotation during the 2005 tour (I just checked the Song database). Once Jokelben is back online you can peruse the 2005 shows and pick your download(s).
I do not believe Jimmy recorded and released an official studio cover version.

There are a few threads on this and this has happened a few times over the years. I don't have the info as to when the "new month"/cycle turns over but I'd keep checking periodically.
