Did any of you ever try Mary Kitchen Corned Beef Hash? The thing that concerns me most is that it gets redder when you cook it. What's up with that?

Can't say that I have, is it good? Do you use it on something or is it a stand alone item? I know that you and I are somehow related, Ohio. There can't be this many food coincidences. I assume your Christmas cranberry sauce still had the shape of the can when it hit the buffet.

well, ...yeah...but, I always cut it into slices! (still managing to preserve the can shape) Castlebury Coney Sauce is for the makin' of the coney dogs (cooking hint: do not fry, please boil the bejabbers out of them so they hold their shape). It's as tasty as it gets.

It's not REAL cranberry sauce unless it's shaped like a can!!!!! (It's easy to slice that way too!)

I haven't seen that sauce either. But if it masks the taste of tha stuff, I'm in.

I have laughted til I've cried!! This is funny stuff. Here in Louisville, KY, we call bologna round steak and hamburger helper gourmet. Speaking of lard, makes me remember the biscuits and gravey my mom made when I was a kid. Wonder how the ol' arteries and pump kept goin'. Must be the clean living I now practice--you know--the buffettesque lifestyle.
Sure could use a bloody mary or two, so I'll be stumbling over to Louie's Backyard 4th of July weekend. Would love to meet all of you in Cincy during the August shows.

After all this food talk, I went in to the kitchen in my office and there was a co-worker heating up a nice can of Dinty Moore beef stew. YUMMY!!! Poor thing didn't know why I couldn't stop laughing. I was actually thinking of trying some Castleburys on my next tube steak if I can locate it.

Not only is Mary Kitchen Corned Beef Hash good eats, but guess what? I even have a recipe for jazzin' it up for your next special brunch party...this is just in from the Redneck test kitchen:
I call it the >>>>>>
MARY KITCHEN MCMUFFIN
1 can of mary kitchen corned beef hash
6 large eggs
4 english muffins
1/4 cup katsup (ketchup to those of us who aint snobby citified folks)
4 slices of Velveeta
oleo (margarine to you Euro-trash snobby types)
1/2 cup 4C bread crumbs (they just happen to be the O-fficial bread crumbs of my family)
Combine the hash, 2 large eggs, ketchup, and bread crumbs. Shape into patties (4) and fry in a generous pool of oleo (to crisp up the patties and prevent sticking) When browned to your liking, place on a bed brown paper bags to drain. Fry the remaining 4 eggs individually. Cook them "over hard" set aside. Split, toast, and butter the 4 English muffins. Place a fried egg in each muffin, top with a hash patty and place a Velveeta slice on top. Nuke until the cheese food begins to melt. Remove from microwave (microwaving can be done at the gas station if your trailer aint equipped with one.) top with remaining muffin half.....breakfast is served....PEACE from southeastern Connecticut...the 51st state....

Well, Lisa, I hope you'll be in Iowa. Someone will have to coordinate the Buffett buffet. I spent a fair amount of my childhood visiting Wisconsin, where the family staples were potato salad (both 'regular' & German), baked beans, bratwurst, & (oh I shiver at the thought of being in the same area as something so disgusting to me), devilled eggs. In fact, I'm reading a fairly funny series of novels right now which have as their protagonists a pair of feisty, oldish sisters who live in Alabama & solve murder mysteries -- started a new one at dinner tonight, & the discussion on the first page had to do with appropriate wedding gifts for someone who 'hasn't a pot to [color=ff0000]••••[/color] in', & the natural suggestion was that she 'probably doesn't even have a devilled egg dish'.
Anyway, Lisa, congratulations on another skin-crawling recipe. LOL, but hoping I'll never be expected to try it....
