We just spent a week at the Disney Resort there. (Not because we wanted
Disney, but because that is what was available to us for free.

)
We had a hard time finding decent food at a reasonable price around the
area. We're not big spenders, or over 65, so most of the places in and
around Vero proper weren't for us. However, we were pleased with the
Lobster Shanty there.

It's on the west side of the ICW, and is actually one of a small chain
based in New Jersey. It was recommended by a local (a waitstaff
member at another restaurant, actually

) and was more to our liking
that the other places we ate. It's on the water, has outdoor seating, and
is right next to a lovely waterfront park that is worth a visit on it's own.

Our family spends a week every summer in Vero Beach. Only an hour or south down A1A from our house, but it’s still a fun getaway. We stay at the Driftwood Inn , which has a neat outdoor deck right on the ocean. The restaurant is called Waldo’s, the Inn is actually a historic building and it’s fun to walk around the grounds. Bobby’s is a nice steakhouse just up the road from the Driftwood Inn.
There is a riverfront restaurant under the bridge as you head over to the mainland (north causeway). We also have eaten at the Lobster Shanty and down the street is another place called Mr. Manatee’s. Very casual Buffettesque type of eatery. Great shrimp and seafood.
All the beaches are nice, lots of public parks. Fort Pierce State Park is about 20 minutes south on A1A.
I have fished rivers around Vero but you really need a boat. Sebastian Inlet State Park (30 minutes north) has great fishing from it’s Jetty. Snook, redfish off of the jetty and trout and flounder on the riverside.
Overall it’s a pretty laid-back area…have fun and I hope this helps.

Oh I forgot a restaurant we stumbled across last year that is also over on the mainland on US-1. It's called The Patio and has been there since the 1940's. One of the best Sunday brunches I have ever had. Bloody Mary's and Mimosa's....incredible desserts, peel-and-eat shrimp and the list goes on....started the day off right....
