Boneless Pork Rib Roast

Anyone have a good, simple recipe for cooking one of these? I have one thawing to cook tomorrow. I'm looking for something that my kid will actually EAT, so funky glazes and fruity additions are pretty much out. I was thinking of cooking it like a pot roast, then realized I DON'T EVEN KNOW HOW TO MAKE A POT ROAST. :o (yes, I can cook plenty of other things, fyi)

Little help here, BN?

Get a bag of McCormack pot roast seasoning. You can either do it in the "baking bag" in the oven, which takes a couple of hours. ORRRRR....if you like using a crock pot for convenience, use the seasonings and some water w/ your roast in the crock pot. You start it in the morning when you leave for work, and it's ready when you come home. Either way you cook it, stick some cut up potatoes, carrots and onions in there. YUM! :D

I tried cooks.com, then google....both just had a bunch of complicated ones for this. I like Auntie's idea, I think. Kids'll probably eat it that way!

edit - Thanks Auntie :)

I like mine Cuban style, but that's a bit complicated.
Roast pork is good just about any old way, as long as
it's done and not dried out. Garlic and onions add a lot.

Just watch how long you cook it....I just realize you said it was boneless. I use this "trick" a lot w/ pork ribs, so I guess the theory is still the same.

sprinkle the pork with rock salt not alot but hit all sides of the meat (you can add pepper and fresh crushed garlic is you're adventuresome)

wrap it in foil and throw on the grill. about half way thru the needed cooking time, unwrap it and put it back on the grill to finish cooking

slice thin and serve on garlic bread....

marinate in lime juice, and then sprinkle adobo powder over it... slow cook it, add a side of black beans and rice & some cubano bread, and life is good. :)
