Friends,

Got a project that I been asked to work on here for Thanksgiving.

Yes... I know... its less than two months away. I am looking for some new ideas for a Caribbean Thanksgiving dinner.

For some reason my creative juices have run dry here and I am struggling with new ideas!

Any ideas and recipes, please chime in.

I am domestically disabled in every sense of the term. However the first thing that comes to my mind is Caribbean Jerk Turkey......

I had jerked turkey in Jamaica once...... but I have never made it.....

you could probably inject the turkey with jerk spices and then fry it in a turkey fryer!

you could do a sweet potato dish as well....

I have a recipe for a carribean mango rice dish.

Oh yea and a carribbean slaw...I'll try to find them....yuuuuummmmm

Maybe there's a jerk "injection" for turkey then drop it in the deep fryer. Man that sounds yummy. I love turkey! Although, I hear that I'm probably going to have to fight BadHabitsAcctnt for the drumstick.....

Instead of frying or oven baking, I would think of some type of wood fireplace or stone oven. If you want to save time, you could probably smoke the turkey first then heat it over open flame.

Also I'm seeing a mango glaze with sliced pineapples inside during cooking. If you do smoke the turkey, there are plenty of ways to flavor the cooking by putting spices and what not in the water.

Side dishes; more fruit than vegatables. In Jamaica, our cook made us some pumpkin soup that was out of this world!

Tropical flowers at each of the place settings will help set the mood.

You could make Jamaican Patties. You know the pastry with the seasoned ground beef with served with Pickapepper?!

Then you could make a sweet potato dish.

Caribbean Rice would be good.
A unique blend of sweet pineapple and coconut with savory vegetables and just the right amount of curry and other spices.
We use the Zatarain's box, but I'm sure you could improvise and make yours better.

You could make a cole slaw dish and spice it up with red bell pepper and onion.

If you don't want to cook for a huge group, you can deep fry a very large fryer...say 6 pounds.

Inject it with your favorite sauce. There are lots of tropical styles to choose from using lime and teryaki, etc....

Fry in deep fryer at 325 to 350 for 4-5 minutes per pound.

Be very careful. This temperture will also cook your skin!!!!!
