It's like a head-cheese.
It's a gelatanous type-substance made from the left-overs from a pig after it's been processed. Basically, they take the snout, the hooves, etc. and mash em all together. Mmmmmm....

I just looked it up. Spelled it wrong....it's souse.

We call sweet potatoes yams, but they are technically NOT the same thing.

Yams genus -- Dioscorea
Sweet potatoes -- Ipomoea
