The 1st Annual Gumbo Cook-off at The Landing in Jacksonville, FL will be on March 24 & 25, 2006. Check-in and a Meet & Greet will be at Hooter's at The Landing on Friday evening, March 24. There will be a Gumbo Cooking Contest, with Gumbo Tasting and an Awards Presentation during the day on Saturday, March. This will be followed by a Cheeseburger in Paradise Buffett at Mongo's at The Landing and a special performance by the Sauce Boss at 9:30 pm that evening.
I know it's the popular thing to say, but shouldn't this be the Inagural.... not the First Annual. I appreciate the spirit of wanting to do it annually, but until the second event, it's not annual.

I want to know if we have to make our roux on site,
or if we can pre-make it and bring it with us. It's too
tricky to imagine making a roux on the spot.
