It takes time to pour the perfect pint of Guinness. After it's poured about three-quarters up, your bartender should let it sit for 119 seconds before topping it off, Glazer says.
O'Callaghan says there's good reasoning behind that method.
"There's an initial pour that is about a little over three-quarters of a pint. In order to be done right you have to use a 20-ounce tulip -- it's a special shaped glass that allows the nitrogen in the product to react," he says.
"Once you have filled the glass a little more than three-quarters full, it has to set for a minute to a minute and a half, and you will see the product start to cascade to the bottom of the glass. After that's done, then you top off the beer. It's just over the top, but it's not running down the side of it."
One more caveat from O'Callaghan: "If they decide to be artsy-fartsy and put a shamrock in the head, that's another indication that you're not in an Irish pub."

Anybody else got St. Patty's Day plans?
I'm off to consume vast quantities of Guiness and Smithwicks in about 5 minutes.

No Guiness here at the resort, but I did see some green beer around this afternoon. I think they might have some Jameson's at the bar in the lobby. I'll let you know if I was successful! Slainte mhath!

Not officially St. Patty's day anomore an yes I did hoist a few!!!!!!
Many many guinness and smithwicks!!! Danced with my wife to an Irish band and generally had a good time.
Irish? You don't have to bva Irish to enjoy the blarney!! Kiss the blarney stone I said!@!!!!
