Mango salsa

Got this great recipe from a friend;

2 mangos
1 large cucumber
3 bell peppers - 1 red, 1 yellow, 1 orange
1 small can of chopped pineapple
1 medium onion
1 lemon
1 lime
chopped cilantro
garlic powder, salt, black pepper
optional crushed red pepper

Dice the mangos, cucumber, peppers and onion. Add chopped pineapple.
Squeeze the juice from the lemon and lime. Add pineapple juice from the can. Add chopped cilantro (about three tablespoons worth) Salt, pepper and garlic powder to taste.
Mix all ingredients well and chill for at least three hours.

We use it on grilled chicken or pork religiously.

Uh oh.. I've never been part of a hijacked Recipe Thread... :lol: :lol:

It's going okay... Working nights doesn't bother me and I LOVE the 12 hour shift/3 night a week schedule... But steph is working days (10 hrs/4 days) so we go anywhere from 1 to 3 days a week without seeing each other at all.. That kinda stinks... :-?

I've had something similar to this a few times. My MIL makes it. It kinda confuses my mouth 'cause it's sweet but spicy. I'm not quite sure if I like it or not.

Not right away. I'm an RT with less than 5 yrs experiance which means I'm on nights in most places. I'm going to start my masters next spring and probably get into some sort of medical administration gig so I'll be a Monday through Friday dude in a couple years. We've just gotta hang tough till then...

My cubicle-mate brings in lots of Mexican food for us and things like candies to try. (Though today we are doing just mango slices and chili powder).

I find that MUCH of it is that sweet/spicy combo. Mexicans do seem to like strong flavors. (Even their non-spicy candy is SUPER sweet.)

We have red pepper jelly down here in Alabama and its pretty good. The southern sweet spicy thing. :)
