My knowledge of mangoes is pretty limited, but for a poor soul who is down to their last mango in Paris, I hafta try and help!
I believe a good ripe one is usually a "little" bit soft to the touch, but not much. In other words, you don't want one that is rock hard, but also don't want something totally squishy. Compare to an orange-you have a little bit of "give" but not much.
Peel the skin off (like paring and apple, only more slippery

I think there's a pit in the middle? Removed that and any seeds and the rest should edible.
