Does anyone have some good tailgate/luau recipes?
Hey fellow parrotheads
Looking for some great Luau/tailgating recipes.
We couldnt get tix for the Camden show
So having a backyard party & listening to concert instead. I was thinking of having everyone bring a tropical recipe to the party to go with our usual tropical drinks. Any suggestions?

This is REALLY good, one of my all time favorites... I usually serve this with a good home made mango lime salsa.
Several pounds of large shrimp
Several pounds of bacon
Favorite BBQ Sauce
Several jalapeno peppers
Chedder Cheese Shredded
1. Partially cook bacon, so it is still very flimsey
2. Devein and shell shrimp. Butterfly and put a "sliver" of jalapeno into shrimp where it was split.
3. Wrap shrimp in bacon, secure with toothpick or cabob on skewers
4. Liberally douse in BBQ sauce
5. Sprinkle with cheese
6. Grill
7. Enjoy with a cold Red Stripe, or your favorite beer.
Dammit I'm hungry now...

homemade margaritas...
What would a backyard Buffett bas be w/ out some tasty margaritas.
1 can limeaide
1 can lemonade
2 cans water
24 oz. tequila / or a fifth
12 oz. triple sec
can of light beer
Use caution if you make these.... Even w/ the water they still are capable of knocking one one one's ass..... I've been known to forget the water whcih can be lethal....
As far as actual food is concerned I always enjoy avocado feta salsa, a great summer time recipe... If you google avocado feta salsa the recipe will magically appear....
Enjoy

Anyone at the Noblesville show can attest that large scallops liberally covered in Zataran's seasoning, as well as stuffed crabs with Zataran's are both fantastic when grilled and eaten with a liberal amount of adult bevearages (Mojito's this year).
Left Field, any comments? You seem to be particularly happy with the beverages and seafood choice for the day....

Sweet & Sour Meatballs
(a lot of times I cheat and use the Sam's Club meatballs, but they're not as good)
INGREDIENTS:
1 1/2 pounds ground chuck
3 to 4 tablespoons chopped water chestnuts
3/4 cup quick oatmeal
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1 egg, beaten
1/2 cup milk
1/2 teaspoon soy sauce
.
Sauce:
1 cup brown sugar
1/2 cup beef bouillon
1/2 cup vinegar
2 tablespoons cornstarch
2 teaspoons soy sauce
1 can (8 ounces) pineapple tidbits, drained
1/2 cup chopped green pepper
PREPARATION:
Combine meatball ingredients; shape into 1-inch balls and brown on all sides in oil. Drain and set aside. Begin sauce: Combine sugar, beef bouillon, vinegar, cornstarch, and 2 teaspoons soy sauce in a large deep skillet or Dutch oven; bring to a boil.
Boil sauce mixture until thickened; stir in pineapple, green pepper, and meatballs. Simmer for 30 minutes.
Makes about 4 dozen meatballs.
