Any chefs on board

One of my sons who is at local CC wants to transfer into the culinary academy. Mr OC and many of his family members were in the food industry for years and I"m aware of many negatives. Might this be better if you go thru a good program? Our culinary school is highly rated and he'd receive his associates as well.

I would contact johnson and wales or the CIA and ask their opinions of the two year programs. I have a friend that works with admissions with johnson and wales....I can pm you her info if you want. She also used to be a chef and can give practical advice as well...

I'd be interested in the J&W info, thanks. I mentioned CIA though and he is not that interested in going away to school. If you speak to your friend ask about the Academy of Culinary Arts in southern NJ. Due to our casino area it's largely geared toward that, however there have been graduates who have gone on to many other arenas and are well known.

Sure!! Not a problem! and you could always pm chefmikee on the board!!! he could probably answer questions....also another good resource is local chefs in your area. Many host private cooking classes and I bet they could answer your questions! good luck!

I know - cover me in a nice Bearnaise sauce and after an extra-judicial rendering, beat me gently with a turkey baster. :lol:

To roughly quote Mikee from several years ago- People from Johnson and Wales are only good for chopping my vegetables.

IMHO it depends if he is looking to move on (away from the area)
if He is going to stay local.. The local program will do.
If He is looking to "go somewhere" then a world acclaimed
school would be better served.


even then I am reminded of the young lady that trained in The City,
in Paris and... I think Greece. She now owns a breakfast place that makes
M and M pancakes and Pecan French Toast. She is Happy. :D
