I added a package of onion, celery, and peppers to the red beans.. I just saved the step, and the extra fork, salad bowl, and dish ;)
I am all for saving steps. And in the winter I do make a lot of one pot dishes...crockpot or braises, stews, etc. But when it hits the plate there is always a protein, a starch, and a veg. :lol:
You only have two options - havin' fun or freakin' out...

Pasta....went to a fundraiser for a friends brother ( who i know) , they lost everything they own in a house fire a week ago!!

Went to dinner with my sister and brother-in-law and we tried a new place, Habaneros Mexican Cantina in Pawleys Island. I had choripollo - chicken covered with crumbled chorizo, rice, quacamole, lettuce, tomato. Really good food and the portions were so big I couldn't finish mine. If it was a little closer I'd probably go there more often.

Me, too, Nan! But in the past few years since I semiretired from being the house slave (since I can't semiretire from teaching, I had to cut back my hours somewhere, so I cut them back at home ...) I have been much more casual about cooking dinner. And guess what, they seem to appreciate it more when I do cook a big meal!

Tonight, since we are having a storm today, it will be the traditional spaghetti with meatballs and sausage. That's what I make when it snows. Makes me feel cozy.

Cased hot italian sausage, I cook on grill or on days like this, in oven, then simmer with the sauce and meatballs. Leftover sausage is soooo good with eggs the next day! I also like to sauté hot fryers in olive oil and garlic to have on the side (which are also fabulous with eggs the next day!), but don't have any in the house and I'm not going out in the mess so we will do without tonight.

Yeah, sausage and peppers is a big BBQ food around here. Wouldn't be 4th of July without it.

your favorite meatloaf recipe... in a jmbo muffin tin
mashed potatoes piped on top with a pastry bag..
once the meatloaf is done pipe the taters on top and broil til golden brown..think I'm gonna serve it with peas, mushrooms and onions as the vegetable
