Easy Cheeseburger Melt

Post by PHAW Webmistress »

Great quick and easy casserole and tasted pretty good too!

Category: Cheeseburger Casserole
Serves/Makes: 8 | Difficulty Level: 2 | Ready In: 30-60 minutes

Ingredients:

1 1/2 cup Bisquick baking mix
1/4 cup water
2 eggs
1 1/2 cup cheddar cheese -- shredded
1 pound ground beef
1 can (10 oz. size) cream of mushroom soup
1 cup frozen mixed vegetables

Directions:
Preheat oven to 400 degrees F and lightly spray a 9 X 13 inch pan with vegetable cooking spray.

In a medium bowl combine Bisquick, water, eggs and 1 cup cheese. Mix well to combine and spread in bottom of prepared pan.

In a large skillet, oven medium high heat, brown beef, then drain off excess fat. Stir in soup and vegetables and cook until heated through.

Spread vegetable/beef mixture over batter in pan and bake until edges are light golden brown, about 20 - 25 minutes.

Sprinkle on remaining cheese and bake until cheese melts, about 1 - 3 minutes.

Sans the mushrooms, but I'll add carrots and potatoes, and a few more spices. :D
