does anybody have a good recipe for a breakfast casserole, preferably the kind you put all the ingredients in the baking dish the night before then get up and throw it in the oven?

BREAKFAST CASSEROLE

1 1/2 pounds sausage
6 slices bread, cubed
1 1/2 cups shredded cheddar cheese
6 eggs
1 teaspoon salt
2 cups milk
1 teaspoon dry mustard
4 ounces mushroom pieces, drained
1/4 cup green bell pepper, diced
1/4 cup green onion, diced

Brown sausage, drain. Layer bread in bottom of 9 x 13-inch well-greased baking pan. Sprinkle sausage over bread. Add cheese. Beat eggs and mix with remaining ingredients. Pour slowly over cheese. Refrigerate overnight. Bake at 325 F. for 45 minutes.
Note: Other ingredients may be added or substituted for the vegetables and I've used ham instead of sausage before, too!!

Both of those breakfast casseroles sound really good. The teachers at the elementary school I used to work put on a breakfast every year for the Seniors that had gone all twelve years in the town where I lived...

and both of these were what they fixed...the Seniors loved it.

since my kids have a habit of eating candy and oranges and apples for breakfast having a casserole will be a huge improvement. These sound very good.

French Toast Supreme

French or Italian unsliced loaf
4 eggs
1/3 cup OJ
1/2 tsp grated orange peel
1 1/4 cups milk
2 tbls melted butter
1/8 tsp cinnamon
2 tbsp brown sugar

Cut bread horizontaly. Cut into slices leaving the very bottom still attached. Place halves cut side up in a large baking dish. In a small bowl beat egs, stir in OJ, peel, milk and butter. Spoon over bread. Let stand 5 minutes. Flip bread cut side down. Combine sugar and cinnamon in a small bown and sprinkle over bread. Cover with plastic wrap and refrigerate over night.
In morning, remove plastic and bake in a preheated oven @325 for 30-40 min. Cut slices and serve with "Canadian" maple syrup.
Very easy, very good.
I have gotten lazy over the years and cook it in a throw away aluminimum dish. Makes morning even easier.
ENJOY!!!!!!!

I will probably make French Toast Christmas trees (regular french toast, cut diagonally, 3 halves layered to look like a christmas tree, 2 breakfast sausage links for the trunk, sprinkle w/ green sugar, something funny for the star if you want- like a star fruit slice- or in my case a piece of bacon...).

But here is my egg bake recipe, similar to the first one:

8 slices bread, remove crusts, butter on one side, cut in 1/4s
2 1/2 cups grated cheddar cheese
mix together:
4 eggs slightly beater
2 1/2 cup milk
1 tsp. salt
1/4 tsp. dry mustard

alternate bread, cheese, bread, cheese layers in 9 x 13 pan. (spray w/ pam 1st) Set overnight.

Back at 325 for 45 minutes or until firm.

Can add: sausage, bacon, spinach, broccoli mushrooms, etc. to the misture.

I usually make this one at Easter, and use asaragus and red peppers to make tulips (asaragus stems, cut red peppers to tulp shape, mushrom pices as butterflies :) )

When I was small (I think I was 2) my Mom was a newly single parent with NO money. She began making a gingerbread house. We had it for breakfast on Christmas morning. Now my kids love it and today, we made our house for Christmas morning breakfast. Hubby will also cook eggs and bacon AND GRITS! I'll eat a bowl of hot buttery grits while I clean up the livingroom mess from wrapping paper and bows. Then I move to the kitchen where he will have cleaned breakfast dishes and I begin Dinner! Works well! I love the tradition of the gingerbread house and we adjusted to recipe to make it less gingery and more cookie. Heck, it's Christmas! Eat a cookie for breakfast and it's probably no worse than a pop-tart!

duuuuude...that brought back many painful memories.

At least it wasn't as bad as my mom. On Christmas Morning, her parents put a big sheet around the tree so she and my aunt and uncle couldn't see if Santa had come, and they had to go to church and eat breakfast before opening presents.
