I've heard chefs say that they hate garlic presses. It gives garlic juice and more bitterness. I smash mine now

it can almost become invasive, if you don't use it. I've actually mowed some of it down.

personally, I loved the smell the few hours it hung around.

and let some of go to seed; you'll always have very fresh garlic.

Smash/mash it with the side of a knife and mince more if needed. Real easy and real fast.

Yup! :) Just harvested close to two dozen bulbs. Three have been put aside for next year's planting; the rest, I'll try to finish up before they rot. :)

Garlic: It's not just a spice, nor an ingredient...it's a food group!

I find when using a press that most of it smooshes up around the sides of the pressor and very little comes out through the little holes. So I chop mine, either with a knife or in the food processor.
