Recipe needed for GATOR Chili!

Our son is employed at a very interesting state agency (SJRWMD) and the employees
enjoy feeding one another from time to time. There are always a lot of off-the-wall
dishes, and for the next one he'd like to prepare some award winning Gator Chili! (Yes,
you can find gator for sale around here.) On the last soup & chili day, a coworker was
top dog with his "roadkill" chili (animals he killed on his own property, not really road kill).

So, if you have a good recipe that works well with poultry, or if you've ever actually
made good chili with gator tail, please post your recipe here so he can start trying them
out. (Yes, we're weird, OK?) Apparently gator will cook up a lot like chicken or turkey,
but will be a bit tougher. I've told him to try to get the meat ground to help with that.

Did a quick Google search and found many pages of Gator recipes.
Here's links to a few that might fit the bill. The basic premise seems to be about the same for all of them.
(But I can't vouch for any since we don't have a lot of sources for Gator meat here in British Columbia!!!)

Great Idea! Please do post the winner - you never know, with global warming and all, Gator meat may soon be available in our neck of the woods!
