My daughter's bf's mom has been dealing with a relapse of her lymphoma. It has been pretty bad. She has had one stem cell treatment a year ago and her immune system is not fully recovered. She had a few other infections. She just finished another round of chemo and is beginning a new stem cell treatment today, for which they are weakening her immune system again. When she comes home I'd like there to be some quick easy meals in her freezer. Any ideas on things to make? She is not following any particular diet or restrictions.

I would see if she has a list of requests.........i remember with my mom it was a day to day thing, some days certain foods agreed with her some days they didn't. and so sweet of you to do i am sure her and her family will be very very grateful! YOU ROCK! :D

Like Christine said, it so varries from day to day. One day something is good, the next it puts you in bed.

One thing to consider is that chemo has a huge tendacy to make one anemic therefore meals high in protein could be beneficial.

I am thinking some homemade soups would be good.

I agree with the comments above. take your lead from the patient--this is a time where the priority is "what goes down, stays down and tastes good" without focusing as much on a balanced diet.

I sort of think each person has some comfort foods they can turn to, that taste good, and that they can digest, even at tough times.

But see what sounds good to the patient.

Casseroles with proteins and fresh veggies worked well in our family. They just pop it in the oven to cook and they keep/freeze well.

This is recent for me, and it is as Connie says, day-to-day. All meat/fish tasted metallic to me. I got most of my protein from beans/lentils or fish. Couldn't do any citrus either. Pasta and cheese were godsends. Best of luck in your kind gesture.

For the rest of the family probably a great idea........freezes well and easy to reheat, but the acid in the sauce may be too much for the patient i remember my mom could not eat anything with red sauce gave her bad bad heartburn!

Since radiation, nothing has tasted the same ... I would ask the patient or the patient's family what they want. Their all-time favorites may no longer be on their top ten list. :-)

One thing that was particularly helpful to us was having dinners for my husband and mother-in-law. Their appetites weren't effected, and they were usually pretty hungry by the end of the day.

They ate casseroles and I usually had a chicken breast and salad. The doctors stressed the need for more protein during treatment and I listened.

Another thing that helped me were smoothies. I used skim milk, bananas, fruit, ice and some yogurt. Yogurt seemed to taste really good to me during the radiation. Haven't really craved it since, but I depended on it a lot during that six weeks. Blueberries tasted really good then, too.

Hope the patient has smooth sailing.

Garlic also kinda screwed with me - still does every now and then.

How about quiche? Lots of protein, not too spicy, and easy to freeze and reheat.

quiche would be nice and I have a baker son who makes an excellent one. How do you freeze it? I have realized that with her depleted immune system she will need to be very careful of what she eats. She may not be able to eat anything that is not freshly made. Also she may not be able to eat fresh fruits and vegetables. So I am going to concentrate on making simple reheat-able things for the family and guests. Her brother who is donating the stem cells is staying with them and coming home every day from the hospital. Lasagna sounds great. Also the wonderful recipe I received via pm. I am going to have my son do a nice quiche. I will double everything and keep one for my family here. haha.
I learned from my son that there is nothing healthy about quiche. Their crust has tons of butter in it and there is cream and all kinds of goodness in the quiche. I never liked it until I tried his.
Thanks guys. This young man is becoming like family and I know he's having to do alot for his family right now. He's concerned that when he's not at his parents house his dad is not eating.
