Salsa Recipe?

We're having a Salsa Showdown at work later this month.....
I won last year, so pressure is on.
I made a mango salsa last year......thinking a pineapple salsa this year....BUT
anyone have anything spectacular??

Sorry Paige, I got nothin'......but.....I google pineapple and coconut salsa, some of those recipes sure do sound good. Could you test them out and let us know what one to use

I'll let you know what I come up with.....I'm leaning towards pineapple with tomatillos....etc etc etc
