Margarita flavor whoopie/moon pies ? for the chefs and cooks

I'd like to make margarita flavored whoopie pies/moon pies, and I like easy. So I'm wondering if you might think this would work.... I'm thinking of using a white cake mix as the pies, and adding margarita flavored jello to my marshmallow fluff filling recipe? Comments and suggestions appreciated. And as always Thank you in advance.

That's what I was thinking. But, my thought process is not always complete, so...., with a vote of confidence like that, maybe I'll go for it!

I made them
My original recipe for the filling is 1/2 cup crisco, 1 cup conf sugar, 1 cup marshmallow fluff, and 1 tsp. vanilla
I ended up using 1/2 cup crisco, 1 cup conf sugar, 2 cups fluff, 1 pkg margarita flavored jello and 3 tbsp's water, it came out a bit sugary and not smooth, I think I should have dissolved the jello into the hot water (3 Tbsps) first instead of just dumping everything into one bowl

and I also should have stuck with 1 cup of fluff....will experiment again in the future.
For the cakes I used Betty Crocker white cake mix....some places on line say mix according to box directions, others vary....I ended up mixing the jello with 3/4 cup of boiling water, added that to the cake mix, with 1/3 cup of oil, and 3 eggs, the cakes came out flat,(I only baked 4 test cakes) i then added 4 Tbsps flour to the mix and that seemed to help, but, the cakes still weren;t as high as i would have liked, maybe next time i'll decrease the eggs to 2 ?
They are edible, just not the full margarita flavor I was looking for, nor the texture of the filling, or the height of the cakes
So...........if anyone wants to give it a go, please do, and by all means post your results/comments here.

Hmmm...I wonder what would happen if you use margarita mix instead of water in the cake mix??????

I do have a recipe somewhere for Margarita cake, and it uses margarita mix, not sure if it's from scratch or boxed mix, but yeah, I'll try it....someday, not today, unless you try it before I do

I can bake as long as I have good directions, but this winging it with what I have on hand, eh!

For the white cakes - - I'd try mixing the dry jello thoroughly with the cake mix first then add the other ingredients.
My filling recipe did not call for the marsahmallow fluff, but it worked well.
Using the Margarita mix in place of water would help also. If you used both the jello and the mix that should intensify the flavor.

Considering that I live in Maine and that the whoopie pie has been designated as the official state treat, I am intrigued.

Mo, maybe you can make a variation of this cupcake recipe in the shape of a whoopie/moon pie?

The icing is definitely not like marshmallow FLUFF, but still sounds good. I guess with the cake you want to get it more the consistency of a soft cookie/cake. I never heard of a whoopie pie

Now, moonpies, I know those very well. The cookie like shell has to be dipped in chocolate. Maybe you could dip the cookie in white chocolate melted and flavored with lime with some coloring.
Cupcakes:
1 box white cake mix (I used Duncan Hines)
7 1/2 ounces margarita mix
2 ounces tequila
1/2 ounce orange juice
3 large egg whites
2 T vegetable oil
Zest of 1 lime
Preheat oven to 350 degrees and line 24 muffin tins with paper liners or spray with baking spray. Mix together margarita mix, tequila and orange juice in a large measuring cup. Add cake mix to mixing bowl and add egge whites, oil, lime zest and tequila mix. Beat on low speed for about 30 seconds until dry ingredients are incorporated and then beat on medium high speed for 2 minutes. Spoon batter evenly into muffin cups, filling about 2/3 of the way full. Bake for 20-25 minutes until a toothpick inserted in the center cupcake comes out clean. Cool about 5 minutes in the pan and then cool completely on wire racks.
Icing:
8 oz cream cheese, room temperature
1/2 cup unsalted butter, room temperature
2-3 T lime juice
4 cups powdered sugar
1 tsp lime zest
3-4 drops green food coloring
