Same here, Auntie. I mixed it up for a pre Fourth party at our cabin yesterday and don't know how many people I had to give the recipe to. My husband's declared it to be his new favorite! Thanks again for posting this, Mitch.

pema-16 oz. I like to use the kind that has some red cabbage mixed in, just for the extra color.

I've cut back slightly on the dressing amounts too, Erin. I've found that it can get pretty "soupy" with the frest pineapple, but the fresh pineapple also makes all the difference.
