This is one of my favorite recipes.
It's a great combination of sweet, spicy, and citrus...awesome on pork but also makes for some kick ass shrimp on the barbie!
Cuban Mojo Sauce:
3/4 cup fresh orange juice
2 T. fresh lime juice
1 T. garlic, minced
1 t. kosher salt (to taste, personally I leave out the salt)
1 serrano or habanero chile, seeded, minced
2 T. honey
1 T. olive oil
1 T. paprika
1 T. chili powder
1 T. dried oregano
1/2 t. red pepper flakes
Optional ingredients/twists:
Substitute orange-pineapple juice for added sweetness.
A splash of rum adds a little bit of "authentic" Cuban flavor.
Combine and mix all ingredients in food processor/blender, marinate meat as long as you like for flavor (longer means stronger flavor/spiciness), grill to perfection and enjoy.
