OLD RECIPE: Cowboy Salad

I've been going through old recipes trying to find some different recipes that are easy to prepare and found this one called Cowboy Salad. We used to have it all the time at covered dish dinners.

Didn't remember it being called Cowboy Salad. Has anyone else ever had this salad?

1 Head Lettuce, chopped
8 oz. Fritos, crushed
15 oz. Ranch Style Beans, drained and rinsed
1 lb. Grated Cheddar Cheese
1/4 cup Onion, diced
8 oz. Kraft Catalina Dressing
2 med. Tomatoes, diced

Mix ingredients, adding dressing and fritos last, just before serving.

Never heard of it. I was just glad to find out that it did not include manure as an ingredient. :lol:

No manure!! I'm glad to say...

I do remember liking to throw it together as a fast meatless meal, that was pretty well balanced, but man, now that seems like a lot of dressing. I don't even know if they sell Catalina Dressing anymore.

I think we also made it with browned ground meat and green olives too.

My sister used to make something very similar, but she just called it 'Taco Salad'.

It had taco seasoned ground beef instead of beans, but otherwise the same, and MAN was it delicious!

I haven't bought it in forever, but they do still have Catalina dressing out there.

My wife makes it all the time in the summer when we are grilling with friends. It goes over very well and is easy to make.
