I'm a big pumpkin fan..........not just pumpkin pie and pumpkin bread. I used to bake pumpkin cookies (try them with raisins or mini chocolate chips mixed into the batter ---soooo good!). I just LOVE pumpkin butter on toast or a warm roll. Also used to make pumpkin cake with a cream cheese frosting....
