Good question, and I want to give you a thoughtful response. The first song that comes to my mind is the updated version of "Saxophones" that appears on "Meet Me in Margaritaville," which you have already said. As a second song, I'm going to say "Margaritaville" itself....

My prediction for the final encore is "He Went to Paris." The music video for that song was shot in Philadelphia, so I could see Buffett closing with it. I would love to hear him close with "When the Coast Is Clear," but I don't think he will. That was the closing song, obviously...
