Haleakala was awesome. We booked with Cruiser Phil and they give you all the extra clothes you need to stay warm! Ditto recommendation on the Trilogy Lanai trip, Mama's Fish House and Road to Hana.
CIP in Lahaina is not a JB/Outback venue - still fun but long lines.
The airplane trip to the big island to see the volcano flows was wonderful and a must do. The only other thing I would recommend is Ioa - wont take long but interesting history and great views.
