Pain Killer
I had my first Pain Killer at Pussers on St Johns USVI.
"The infamous Pusser's Painkiller®—the drink we are known for throughout the West Indies, in the U.S. and many parts of Europe!
The Painkiller® is a blend of Pusser's Rum with 4 parts pineapple juice, 1 part cream of coconut and 1 part orange juice served over the rocks with a generous amount of fresh nutmeg on top. You have a choice of numbers 2, 3 or 4, which designate the amount of Pusser's Rum! Cheers!
Painkiller #2 ... 2 parts Pusser's Rum
Painkiller #3 ... 3 parts Pusser's Rum
Painkiller #4 ... 4 parts Pusser's Rum

pour in 325 ml Bacardi 151
pour in 650 ml pineapple juice (fresh if you can get it)

Bacardi Limon and Ginger Ale, or if you're watching your weight or you want to try to psych yourself into thinking your doing everything you can to stick to your diet, then use a Diet Ginger Ale. I started on these one afternoon and ended up taking a much needed nap
My wife's current favorite is Absolut Limon, Lemonade (she prefers pink) with a splash of Chambord (or any raspberry flavored liqour); swap the Absolut with Bacardi Limon if you'd prefer to stick with a rum drink. This one is easy to make in bulk, jug or pitcher, but watch out, on a hot day they go down way too easy if you know what I mean

Rum drinks can only be made with good rum... Mt. Gay, Appleton, Cruzan... Bacardi is turpentine. Flavoured rums are fine with fruit juice but not good in these drinks. For a knock out Cuba Libre (rum and coke), try making it with 151 proof St. Vincent rum.
Best on its own... Doorly's (Blue Parrot) on the rocks
Boat drink ... classic Yellowbird, honoring de bananaquit, as served at Frangipani, on Bequia
1 1/2 good rum
1/2 Galliano
Splash of creme de banana
Fill with fresh orange juice
should be served in a tall chilled glass and skip the ice cubes
CLASSIC
Rum punch
1 oz. of fresh key lime juice (no, Rose's or Persian lime won't work!)
2 oz. simple syrup OR Falernum (sugar cane liquer, 8%, for extra !!)
3 oz. Mt. Gay Extra Old rum
4 oz. chilled filtered water
dash of bitters
Shaken together and poured into a tall chilled glass, sprinkle of nutmeg, preferably fresh ground, on top. Should be a pale brown in color. Made a gallon jug of this once, and Jimmy's sailing buddies made it disappear like water... more potent than beer however. Don't plan to drive.
If you've ever been given a rum punch that was pink or yellow, you were given fruit punch with rum in it. The classic isn't sweet, but refreshing.
The locals make puncha crema for grandma... this is good rum mixed with light cream, rather like eggnog without any eggs. Maybe nutmeg.

for some great sippin' rum, go with Mt. Gay on the rocks. Mt. Gay Eclipse is easy to find but if you can get the white label Mt. Gay "Barbados Sugar Cane Rum," get two bottles!
Just mix it with ice.
10 Cane is also excellent and has a very clean and unique flavor but a bit expensive if you can find it.

Dole has a pineapple / mango juice that mixes well with any rum and I've experimented lately with the traditional Pain Killer recipe (mentioned already in this threat) only I added a scoop or two of vanilla ice cream and used the pineapple / mango juice instead of OJ. Add the fresh nutmeg and you have what I call a "Painful Mango Killer." Remember - without Pusser's, it's just not a Pain Killer of any kind.
Trust me, they go down dangerously smooth.
