Good Morning !

Today is National Blueberry Pancake Day. I can't remember the last time I had a pancake. Kevin always makes a "big as your face" pancake for our grandsons when they are here for a sleepover. I have blueberries to put in my yogurt for breakfast but that's not really the celebration for today :)

Are they pancakes or flapjacks for you?

On January 28th, National Blueberry Pancake Day brinks the sweetness of blueberries to your pancake, flapjack or hotcake.

The early pancakes consisted mostly of flour and milk and were more like biscuits. Later, eggs, milk, a leavening agent (such as baking powder) and fat were added creating the fluffier, lighter pancake we know today.

Adding blueberries to the pancake batter when mixing up the ingredients may result in a bluish hue. To avoid this, add them right after dropping dollops of batter to the hot griddle.

Blueberries add a freshness to pancakes and nutrients like vitamin K, vitamin C, manganese and copper.

Good morning Linda. I ate blueberry pancakes most every day for years, but now it's blueberry crepes once a week.

In my twenties, I made my own cakes with blueberry pie filling. They were a tad loose. :D
If I wasn't fishing in this all day rain,I'd be home doing something stupid.

Happy hump day! We call them pancakes and I usually make them when the grandkids are here, but they like Chocolate chip pancakes. I always have blueberry pancakes at least once every time we go to Maine!
Taking my car to the mechanic this morning, I threw a brake pad. 😒 Hopefully he will be able to fix it today 🙏

Good morning BN. I'm enjoying a cup of blueberries on my oatbran this morning, usually have them on my Cheerios.

Good afternoon BN. Cold and rainy outside, got a fire in the fireplace, sipping on a rum drink, cat is asleep in the chair next to the fire and some mellow JB on the stereo. Life is good.

Love pancakes but not gonna lie - Vacationland blueberries are much more tart than California berries. Sun is a beautiful thing.

Good evening all. :)

Had to park fairly far from our apartment last night, so left a little early this morning to walk to the car.

Work is insanely busy. New hire paperwork (a total of 19 in the last month), and several haven't even showed up!! :evil: The hospital has a "Survey" (think an audit that could shut down the hospital) coming up in February, so we have to make sure we so many ducks in order. :-? New/old doctors to be credentialed and re-credentialed, tons of paperwork.

To top it off, I completed a whole bunch of work and we had a power blip, and I lost a lot of work I have to re-do tomorrow. :-?

And he had to go to Nebraska for business (just overnight), but I hate that he's not here. :(

So time to have an adult beverage, watch cooking shows, load the dishwasher, take out the trash, and try to get to bed early. :)
