Good morning Tammy, Ken, Moooogy, and my husband.. ;)

Back at 'em for work today - Two new hires today. At least one of them is a return employee. Makes things easier.

If anyone is looking for a dinner idea this week, Cameron and I made this yesterday (Have made it before, but it's good, and easy. :D

3 boneless chicken breasts
4 boneless chicken thighs
1 package of Cacique Queso Fresco Cheese
2 - 8 oz packages shredded of Colby/Jack cheese
2 - 3.8 ounce cans of sliced black olives.
2 cans original Rotel
Additional green chilies if desired
Cumin
chili powder
onion and garlic powder
salt / pepper
24 corn tortillas
Sour cream
Boil chicken in chicken broth, cumin, chili powder, salt, pepper, onion and garlic powder until it reaches correct temperature (about 15 minutes). Cool and shred. Toss with more of the spices, as you like.
Grease an large oblong casserole dish. Put a small layer of Rotel mixture. Then 6 corn tortillas, chicken/olives/shredded cheese. Repeat 2-3 times, depending on the size of your casserole dish. Bake at 350 for 20-25 minutes till warmed through and cheese in melted.
Serve with sour cream and hot sauce, if desired.

Good morning gang. I started the day with my favorite breakfast, 2 eggs, thick, smoked bacon and thick multi grain toast. I eat one piece as desert with peanut butter and blueberry jelly.

Yumm. Love bacon and eggs. Even better when you cook bacon at a campsite.

I don't remember eating bacon until a winter campout at Boy Scouts.. It was wonderful! My dad cooked it. We never had bacon at home. Sleeping in a cold bunkhouse, using a hand me down sleeping bag, hiking with leaky boots through the snow and bacon. Great time!

One of the radio stations in town has a morning DJ named Adam. When I moved here 8 years ago he was only the "sidekick" instead of the main morning show host and they used to call him "up & Adam".

I moved here in Nov., 2012. We had an inch of snow in Feb., 2013 and another inch in Feb., 2014. Nothing since then. I'm good with that.

We are on day 6 of our quarantine. If Kevin is symptom free by end of day tomorrow, he can go back to work (he's only been going to the office 2.5 days/wk since June) on Wednesday.

While I am not officially required to quarantine (as a contact of a contact) it was determined that my time is 14 days....I argued that I didn't even need to tell the Judge (who told the Press J - his best judicial friend), so if all goes well, I should be back in Chambers on Wednesday or Thursday. I've been WFH and let me tell you, it's a B*$%H. I may need to take some of my 25 vacation days next week !

Afternoon BNers

I didn't see any snow fall but according to the neighbor's roof, we either had snow or ice. I have been watching a tiny patch slowly fade away. Schools are closed...not a big deal any longer....
