My favorite recipes for Key Lime Pie don't involve cooking the filling, only topping it with egg white meringue and browning that in a low temp oven. The acid in the lime juice 'cooks' the eggs and sets the filling.
How ever you make it, never,
never,
NEVER make the filling green with food coloring! That's a sure sign of a 'rookie'.

I made the pie and I did cook it and didn't use any food coloring, when I had the key lime pie at hooters it was green and I thought it looked pretty bad,i'll have to try the uncooked kind sometime.

Has anyone ever had the key lime pie at "The Old Oyster Factory" on Hilton Head Island. Nothing I've ever had even comes the least bit close to it, it's to die for!

I like putting in a LITTLE color making it a little bit greenish.. for those who don't know any better, and think it should be green.

I made it for my family at Easter.. and they LOVED it!!! My Mom made it again a few weeks ago... it very easy and tasty!

Not wanting to spend the time on a pie? Rather have it in a glass? Try this one:
1 part Licor 43
1 part Sour Mix
1 part Half & Half
Shake, pour, enjoy your Key Lime Shooter!~

When we lived in Key West, my wife made the best Key Lime pie. How? The secret ingredent is Nellie & Joe's Key Lime Juice! Nothing like a Key Lime. They now sell the bottles of juice outside of FL. At least we can find it in Georgia now.
1 can of sweeten condensed milk
1/3 cup Key Lime Juice
blend together
Mix in 8 oz of Cool whip
Pour into graham cracker crust and put into fridge for at least 4 hours.

Man, I hope this is good. I'm making one for work on Friday for a party. I found the Nellie & Joe's at Kroger here in Knoxville.

key lime pie shouldn't be green. true key limes don't have green juice. it may not look pretty but, it tastes the best with fresh key lime juice. i managed to find some at a wal-mart super center. ive also played around with a sour cream topping which was o.k. as well.
another recipe ive been toying with uses gelatine to give it a lighter, fluffier feel.
