Don't know if it has been mentioned yet, but try to have LIVE music at the joint. I think live music would draw a much bigger crowd.

Keep a good juke box. Try and get some real Calypso Music ie: Lord Kitchener, and other native island music (Carribean, and South Pacific). How about a few Tiki god's?

i was seriously considering food. but not a whole huge menu, just a few things that everyone seems to like. i.e. cheeseburgers, fried shrimp, oysters.
i def. planned on serving mojitos as well. they are non existant in this town, and the nearest place to get them is ONE restaurant in new orleans. from what i understand, the mojito is supposed to be the next huge thing, like the margarita.

The bar I frequent that does this, if you want to participate, you fill out a card that they keep on file. When you go, you ask for your card, every beer the bartender initializes the card... cards expire after one year (if you don't complete the trip ... gotta start over) there are currently several hundred active cards.

Painkillers, had several in the Virgin Islands where they were invented, wonderful.
The Painkiller
4 oz. pineapple juice
1 oz. cream of coconut
1 oz. orange juice
2 - 3 or 4 oz. Pusser's Rum (or as much as local law enforcement will allow.)
Mix ingredients, and serve on the rocks. Sprinkle with fresh nutmeg.

The snocones are a great idea, you may also wanna try injecting vodka into the Fla-vor-Ice pops you buy at the store. Those are the long narrow one's that come in all different flavors. We had a winter themed party every year at school and did the sno cones and the ice pops. big hit

If its indoors, make sure its well ventilated, maybe with a boatload of smoke-eaters. Of course you could make one room a swim-up bar, with tons of real tropical plants and trees, and keep it about 90 degrees with lots of humidity so people sweat their b*lls off........just keep the water temp at about 70 degrees, and the whole roof a sky-light. Jimmy might show up in those conditions! Oh and dont forget to serve baromoter soup in that room.
A bunch of talking parrots squawking in the background would be kinda annoyingly neat......
Make sure you have Margaritaville Tequila in stock......(I cant drink cuervo anymore)
You could name the bar "Bubba, come on in!" It kinda rolls off the toung quite easily. Advertise that Jimmy will be making appearances and then sue Lord Buckleys nephew for false advertising. Or just have a relative legally change his or her name to Jimmy Buffett.
Have charity fundraising programs often. You could even suggest throwing coins into the pool and sending the proceeds to the "Make-a-Wish" foundation.

A tiki bar is a great idea. I wanted to do that for a long time. I had a friend named Steve Cabano and I wanted to pay him to use his name and call it Cabano's Cabana, and just have him sit at the end of the bar and talk to customers.
If you build it on a beach it wont matter what it has inside it. It will be packed.

1 - 46oz can pineapple juice
1 - 46oz can orange juice
1 - 12 oz can cream of coconut (must be Coco Lopez)
1 – 750 ml bottle of Cruzan Spiced Rum
Mix ingredients, serve on the rocks. You must then grate fresh nutmeg on top (the fresh nutmeg is the key to this drink, it’s worthless without it!)
By the way, where did you have your favorite PK in the Islands? We found Cooper Island Beach Club was superior by far (they gave us their recipe).
