How about Ten Rounds With Jose Quervo by Tracy Byrd? Sounds like it was written for (or in emulation of) Jimmy Buffett. And, come to think of it, the melody sounds remarkably similar to 5 O'Clock Somewhere.
Personally, I'd love to hear Jimmy do I Can't Explain by The Who:

I hear ya there... I get confused everytime I hear one of them (5 O'Clock or Ten Rounds) on the radio.

It is just SOOOOOOoooooooooo Jimmy. I know he couldn't do it, but Stay would be right up his alley.

I dunno if anyone has mentioned "Voila An American Dream" written by either Rodney Crowell or Guy Clark.
I just downloaded both versions and this song is Buffett all the way.

There is a band that's not very well known here but is big in Ireland called the Saw Doctors.
They have a song that I'd love to see JB cover called, "I'll Be On My Way". It's the happiest song about death I think I've ever heard.
It actually sounds more like a Buffett song than a lot of Buffett songs.
After that, I'd like to see him cover Joe Ely's "She Never Spoke Spanish To Me" or maybe "Gallo Del Cielo".
