I never cared for pot pies as a kid, but then again
I never liked my veggies touching my potatoes, etc.

I like 'em just fine now.
(I guess doing time changes your perspective. )

You can keep the pickled beets, thanks.

I hope the peas don't start a rebellion. They could be scary in mobs...
Next topic: slimy tomato seed goop. I love tomatoes, but that slimy muck could turn one off. Not arousing.

On the way out to Montauk there is a big sign that says "CLAM PIE!" That's pretty sexy.

Looove chicken pot pie, here is my own recipe:

Chicken Pot Pie

2 boneless skinless chicken breasts
3 – 4 med. zucchini
1 ¼ med. Onion
1 roasted and peeled red pepper (recipe below)
3 tbs. chopped garlic
¼ cup chopped Italian flat leaf parsley
1 tbs. butter
1 can lowfat cream of chicken soup
Shredded Parmesan cheese
2 prepared piecrusts

Poach chicken breasts in water with a bay leaf, ¼ onion and 1 tbs. Garlic. Peppercorns, celery, carrots optional. Cool and dice ½ “

Roast pepper under broiler or on grill until skin blackens and loosens. Place in bag to sweat for 10 min. Peel and rinse under cool water. Seed and dice ¼ “

Dice zucchini

Chop onion, garlic and parsley

Saute onions and garlic 2 min in butter. Add zucchini, pepper, chicken, parsley, soup and ½ can water. Salt and pepper to taste.

Spray four 5” ramekins with cooking spray. Pour chicken mixture into ramekins. Sprinkle with Parmesan, put piecrust on top.

Bake in a 350-degree oven for 30 minutes

Redwinemaker's pot pie sounds much more like something I'd eat . . . nothing from the freezer section at the mart. Who KNOWS what parts of the chicken wind up in there?? OMG! Beaks, claws . . .

Much better than Shepards Pie. Shepard is some pretty tough meat, especially if you get that hook caught in your mouth.
and old Shepard is even worse... they've been even longer without a bath.
