I have made the following:

Chicken Satay w/Peanut Sauce
Tequila Grilled Shrimp
Pork Tenderloin w/Tequila Lime Marinade

*I usually make the main dishes above on wooden skewers so it is easier for the guests to eat.

Steamed Edamame
Veggie and Cheese Platter
Chips & Salsa
Marinated Olives

Jello Shooters
Mini Key Lime Tarts
Strawberries stuffed w/Cream Cheese Powder Suger Mixture
Rum Soaked Pineapple

That is all I can think of right now. I will look at home at a menu from my last party

Any particular recommendations on hot dishes, and cold?
I make a killer artichoke dip...the bowl is always licked clean in less than 30 min... :D

Haven't seen it... what store did you get them at last year?[/quote]

It was at a local Fleet Farm. Seemed to be in a few other places last year, too.

This year they seem to have disappeared and the clerks just look at me like I'm from another planet or something. ;-)

One of my favorites to serve is pineapple chunks soaked in coconut rum. A clear winner with my crowd.
hey, PA PAR8 HED......how long before the party starts do you soak the pineapple chunks? I am gonna try it this Sat. night.....how many cans of chunks (uhh...that doesn't sound right) do you need to serve about 20 heavy drinkers? 8)
I always do mine the night before. I used fresh pineapple the first time and then got lazy and switched to cans. Both are good. And I strain about half of the pineapple juice to make room for the rum.

I did about 8 cans for a booze cruise I ran last year for 85 people, they all went in the 3 hour cruise.

One year my buddy drank the leftover juice and didn't realize how much rum he was drinking. It is better consumed in shots.

Buy those little umbrella toothpicks and it is easy serving.

I also think such tropical games as:
A. Hide the Lime
B. Find my Tiki Torch
C. Blindfolded Coconut Groping

also contribute to a delightful tropical romp.

Course...

My favorite is - when your all done grilling and had three or four too many margaritas...

Take all the charcoals in the grill and lay them out on the ground in a rectangle, evenly spaced about a foot wide by however long you can make em.

Then walk on them.

Tell every one it doesnt hurt a bit - really!

and watch the fun begin - woo hoo!

ps. It's a good idea to have bunch of chairs ready and some fresh bags of ice is a good idea too!

I must say that statement(s) has me hysterically rolling around on my office floor. Good One!

May we suggest fire batons that you can toss in the air and do arobats with while we are at it? I love watching those! lol

We've done the pool, hot tub combo and added tiki torches, palm trees (fake), leis, island music, tropical drinks, fish net with assorted catches hung up on the wall. We also ran strands of little white lights through the bushes along the walkway. Last but not least we did a section of the yard in sand, which proved to be a big mistake when it came to people walking from the "beach" and getting into the pool or hot tub. Not good for the filters etc.

Food was roasted pork, a real fruit salad, bread, shrimp, lobster and assorted fish. Drinks consisted of a wide variety of mixers and booze, wine and beer.

We encouraged everyone to wear tropical clothing and those that didn't have any when they arrived frequently ended up wearing something tropical.

hahahaha.. YOU my dear have a beach. We only have a pool but there has been a LOT of wild parties there. The other night, Friday I believe it was. I sat there at the bar with some Buffett playing. It was awesome! Yea, I was by myself and my own bartender but hey.. when you have spent as much time at a bar as I have, it seemed normal.
