All of this talk about pumpkin made me start pulling up some of my favorite pumpkin recipes. I hope you enjoy!
PUMPKIN MARBLE CHEESECAKE (low carb)
(FROM PEAVINE'S WEB SITE COOKBOOK)
1 lb CREAM CHEESE
3/4 cup HEAT-STABLE ARTIFICIAL SWEETENER
3 EGGS
1/2 cup SOUR CREAM
1 TSP VANILLA
1 cup PUMPKIN PUREE'
3/4 TSP CINNAMON
1/4 TSP EACH GINGER AND NUTMEG
IN LARGE BOWL, BEAT CREAM CHEESE WITH 1/2 CUP OF THE SWEETENER UNTIL FLUFFY. BEAT IN EGGS, ONE AT A TIME, BEAT IN SOUR CREAM AND VANILLA REMOVE 1-1/2 CUPS AND SET ASIDE.
TO REMAINING BATTER, BLEND IN REMAINING SWEETENER, PUMPKIN PUREE, CINNAMON, GINGER, AND NUTMEG POUR INTO SPRINGFORM PAN. USING LARGE SPOON, ADD DOLLOPS OF RESERVED LIGHT-COLORED BATTER, AND SWIRL TOGETHER WITH A KNIFE. PLACE PAN IN LARGER CAKE PAN, POUR IN ENOUGH BOILING WATER TO TO COME 1" (2.5 cm) UP THE SIDE. BAKE IN 350* F OVEN (180* C)FOR ABOUT 50 MINUTES OR UNTIL PUTTED AND NO LONGER SHINY IN THE CENTER. TURN OVEN OFF. QUICKLY RUN KNIFE AROUND EDGE OF CHEESECAKE, LET COOL IN OVEN FOR ONE HOUR. REMOVE FROM WATER AND LET COOL COMPLETELY ON RACK. REFRIGERATE FOR AT LEAST 8 HOURS OR UP TO TWO DAYS BEFORE REMOVING FROM PAN.
PUMPKIN PUDDING
1 pkg. instant sugar-free vanilla pudding mix
1 1/2 c. heavy cream
1 15 oz. can pumpkin
1 tsp. pumpkin pie spice
Mix the pumpkin with the cream. Add the spice. Stir in the pudding mix.
Let set up in fridge for 15 min.
I used a whisk to mix it all up.
I was thinking a pecan pie crust would be really good.
It reminded me of an Amish Pumpkin chiffon Pie I had a few years back.
No Bake Pumpkin Cheesecake
1 pkg plain gelatin
1 cup boiling water
16 oz cream cheese
1 tsp vanilla liquid stevia or Splenda, to taste
1/2 cup pumpkin puree
1/2 tsp cinnamon dash cloves, ground
dash nutmeg
Dissolve the gelatin in the boiling water in a mixing bowl. Stir well. Cut the cheese into small pieces and place in the dissolved gelatin. Add the pumpkin vanilla and sweetener and beat well with an electric mixer. Pour into a buttered pie pan or lined muffin cups. Chill until firm. 8 servings: per serving = 5 carbs

Pumpkin
We always have a HUGE pumpkin carving party. We end up with about 20 or 30 carved pumpkins. Of course as the night goes on and the drinks keep flowing, the pumpkins get more creative!
But I always keep a few whole to bake- you caint use canned pumpkin for baking this %$#!
I do it for the stories I can tell!!!

actually . . I used to do the whole carving thing with my keets when they were young . .
now . .just me. . ? ?. .no . .but I do make an effort . .
