Montego Bay Jamaica, 4 nights, laidback/relaxing or recommen

Thinking of flying to Montego Bay Jamaica for 4 nights over Memorial Day.
1st time to the islands. Since the airfare will be around $600 roundtrip each from Oklahoma, would like to get a motel room for around $100 night. Not looking for upscale hotel or dressing up for meals. Sandals all inclusive was going to be $3200 for 4 nights + air. We like snorkeling, gardens, hiking on some trails, cheap beer and small places where you don't even need to shower to sit down and relax to have a drink and listen to island music. Fresh seafood. Don't mind walking, but would like to be pretty close to a beach. $5 for Dr.'s Cave Beach sounds o.k. Usually put in several miles a day walking around French Quarter/garden district or DisneyWorld. Would like beer for lunch and dinner maybe at mom and pop places for local flavor. Thinking all inclusive wouldn't be for us since we want to venture out. Any thoughts on Toby's Resort (cheap motel-like) or do you recommend another island? Day trip to the Dunn's River Falls looks nice. This will be our first real vacation employed, as we have been in graduate school for several years.
