There's not really a lot of fruit relative to the size. But it's easiest to slice it down the wide part of the pit, then slice to (not through) the skin long-ways and crossways (like a tic-tac-toe board), then turn the skin inside out to get the fruit out. You do that on both sides, then peel around the remaining edge, cut through to the pit and then just trace the knife around it (or just eat that part off the pit if you're by yourself...)

My knowledge of mangoes is pretty limited, but for a poor soul who is down to their last mango in Paris, I hafta try and help!

I believe a good ripe one is usually a "little" bit soft to the touch, but not much. In other words, you don't want one that is rock hard, but also don't want something totally squishy. Compare to an orange-you have a little bit of "give" but not much.

Peel the skin off (like paring and apple, only more slippery  ).

I think there's a pit in the middle? Removed that and any seeds and the rest should edible.

I hope this helps!! :D

If you can get them cut up :) , dice some and throw them in a bowl with some diced jalapenos, red onions, some garlic and lime juice. It's wonderful on mild-flavored fish (orange roughy, tilapia, etc.)
