I did some research - it has a rather interesting history dating back to the Romans - I have had it and yes its very tasty, but of course I also like Veal so....go figure

The intersting part also is that the animals are essentially free range, then with the last week or so they are force fed, but the process for force feeding them only lasts 2-3 seconds. I also didn't realize that these birds, after the liver is harvested, are used to make another one of my favorite dishes duck confit :D

Anthony Bourdain had a show where he visited a process room..
Those were fair size ducks..
But that was in France..

I don't know how much tv you watch..but...it's probably more than I do, yes...

as far as the "other" half...that's a bit off base, don't you think...you seriously think the "other" half can pay $20 for 2 oz. of...duck liver? hmmm..what would it take to feed a family of 4?

Iron Chef? Are there people that ...really cook like that?...what few times I've seen it, it's totally professional gourmet....I'd say not too many people are really into that... gourmet, yes..but these guys are professionals...I would believe that particular show is more entertainment than reality...I don't think I've ever seen Emeril doing the duck thing...not Fois Gras.

eating.. internal animal organs...is not healthy, anyway...(ask J. Dahlmer)

You know...if you only look at a duck or goose as something to be eaten you're missing out on free entertainment....I think they're pretty cool to watch...and I truly enjoy when the wild ones migrate..

Here is a link to Foodtv.com - Emeril features it in his recipes and has created shows around it.

I don't usually check with serial killers for eating tips - and that is one resource I've not wanted to utilize, as I'm not much of a cannibal - BUT the medical associations encourage you to liver since it's an excellent source of iron - now I'm not saying that a duck/goose liver has the same compounds as a calf liver, don't honestly know.
You know...if you only look at a duck or goose as something to be eaten you're missing out on free entertainment....I think they're pretty cool to watch...and I truly enjoy when the wild ones migrate..
I appreciate them for both aspects - I have some that live in my pond and enjoy watching them and have assisted in getting the ducklings to hatch.

a ducks brain is the size of a...walnut? Is it balding and smokes a cigar?
This was just tacky - but I will say at least the balding "duck" can utilize his resources and have an intelligent conversation grounded in fact vs. misinformation and stooping to throwing stones.

Moonie - I of course don't know you - but there is no right or wrong answer here, just different views - I've actually enjoyed looking into something a little further than I had in the past. Honestly not given much thought to Duck/Goose liver.....but have always appreciated learning about different cultures and history.

Guess we should be thankful he didn't find a post on the Dog Farming in South Korea - and no - that's not something I'm wanting to try or discuss  See even we midwestern girls have our limits! :D

then let's just flip you a dead fish !!

enjoy it all you want....the supply will eventually be gone... :)

searching the 'net for recipes? geeze...that's a tad weak, don't you think?

know what I mean? this discussion is basically moot...the suppliers are going out of business and the middle guy has quit delivering said product... :-?

Hmm you wanna talk dog? KC's a hot bed of puppy mills, no need for you to go to Korea...

Midwest? yeah, I've been there...

throwing stones...I'll leave that one there...you are a newbie, after all.. :wench:

Actually I thought it was goose too. As for the French and what they eat and what makes a gourmet meal ,......well some things I think I would have to pass by. I saw an umpteen course meal served and part of it was some sort of little bird cooked whole and popped into the mouth all at once. There is a special napkin provided that one spits the beak and feet into. Not saying I wouldn't eat one but the whole thing looked pretty disgusting.

As for eating animal organs, one some people love and some people hate is liver. WHY the liver? I dunno. Personally I love liver. Very tasty to me. If you don't like it. That is well and good and ok with me.
This just goes to show that we trully have learned nothing. Take a look at Prohibition.Beer and Alcohol became a forbidden fruit and created an underground market....and many people became quite rich.

So who did benefit and actually gain from such type laws and who REALLY LOST? and who REALLY paid???

I don't normally eat in gourmet restaurants, give me a hole in the wall, simple looking little place with good food and I am there. But yes I do like different foods and Iwould love to sample this delicacy,(well maybe more than sample.)

I don't think animals should be treated inhumanely by any means. The animal or plant is a food item no matter how you look at it. So what do you do? We are people and we have to eat....I cannot say much veal but I have eaten more than my share of lamb chops.

No I never saw the lamb they came from. I know there were, and probably still are, disreputal people out there that raise veal and other animals.
Anyone ever had Kolby beef? Do you know how that particular cow/steer was raised? It had a good life

I have raised geese, ducks, and chickens. I will tell you this you will not find a better watch or gaurd dog than geese. ( geese are also good for your lawn. they mow it and fertilize it) If you think I am kidding about geese being good alarm animals wait until you experience it. NOTHING gets by them. Just wait until they attack. you may not think they can do much damage or instill fear....but just wait until you get attacked by one or more. Appearences are decieving........Given a choice between relying on 140 pound rottweiler or a flock of geese for security.......I will take a flock of geese most any day. Laugh if you want and all you want at that.
We will see what happens when you or someone tries to get around them.

As for the foie gras and the ducks.....yes I would and I will eat it. I will eat most anything that won't eat me first and I know have eaten quite a few things that would have eaten me first, if given the opportunity.
Roll with the punches, play all of your hunches...come what may...

just need to know two things about dog farming:

Chihuahuas make good snacks, just enough to whet the appetite, but not give you that bloatedly-full feeling... and St. Bernards/Great Pyrrennes (sp) are good when you're having the whole family over for a barbeque... :D

doesn't suprise me California was one of the first states to interfere with legal private business practices. Ya think they(our esteem leaders) would be more concerened with....oh I dunno....education, health care, the states budget, immigration and undocumented workers....just another case of having priorities completely turned around in order to appease the extremist loud mouths from PETA.

I suspect you'll have to dress for dinner...I doubt you can get it in carry out... :o
Moonie,
Not a problem. I assure you that I am perfectly capable of "dressing for dinner." I don't take ALL my meals here on "Redneck Row."

In response to some other people's comments, whoever they are, b/c I'm not into quoting and it's Sunday morning and that's too much like work
And I'll eat all the danged fish and shrimp I want to, too. They're being farmed now to help supply them, since they are so popular.

And it's caviar, with an "a" at the end.

They farm fish now?? GASP

the "it will eventually run out" crack by Moonie is a typical response when the lefties run of out witty comebacks.

Mt. St. Helens will erupt before our fish supply runs out.

On the other hand...eat wild boar..they cannot be eradicated despite the best efforts of some well intentioned naturalists who feel the pigs are a pain in the ass...HEY, what about the every living creature has a soul? maybe pigs don't count

That kind of reminds me of something a good friend in South Africa told me yesterday......it was about the crime there and what the "Minister of whatever" ( The top cop ) had to say about it..... To give you the short version, the guy actually said "....If you don't like the crime you can always leave...." I don't mean to,nor am I trying to hijack this thread but you brought up PETA and California, and their umm so called "leadership" made me think of that.
