here's my recipe....
start by making some simple syrup.
mix 1 cup sugar into 1 cup boiling water, stir until completely dissolved. i keep mine in an old gatorade bottle and refrigerate between uses.
a few sprigs of mint.
juice of 1/2 to 3/4 lime
muddle the mint and lime in the bottom of a highball glass
add 2 oz of your favorite rum
add about 1.5 oz of the simple syrup
add ice and top off the glass with club soda.
stir and garnish with a sprig of mint.
experiment until you find the right balance of lime /sugar / rum for your tastes.

Everyone in the world is now serving Mojitos....when I order them at a bar, they are soooo sweet.
I like them lighter....with more lime and club soda.
They should be refreshing, not put you in a diabetic coma!
Enjoy!

exactly!!! They should be lightly sweet. I had one at an upscale Italian restaurant the other day that was loaded with sugar.

I've been asking for a large side class about 1/2 full of club soda, with a couple of limes. I can use it to cut the sugar.

Just to be sure we're on the same page. You want to use one of these muddlers:

Not one of these:

If you get the chance, the Cheeseburger in Paradise restaurants make a nice mojito. Just ask for them to make it tart. But be careful, they'll sneak up on you. If you're home, the easy way out is a pre mix by Premium Blend, Authentic Cuban Mojito mix. It's pretty good.
You can find it local sometimes or order right from the company.

yep, they sneak up on you and whack you over the head...and the wallet...and then the wife hits you over the head with the blender and it just goes downhill from there.
