What's up with all the coconut....I mean...there is more to island cooking then that ingredient. (Which is not one of my faves....)

Well, it's clear this is happening for no reason other than promoting the album (a/k/a not happening just because they're buddies). If the latter were the case it would make more sense for Jimmy to be helping cook (a la Dave Letterman and Martha Stewart). It would be a lot more entertaining if Jimmy were doing something and Emeril would stop yelling "JIM-MAY BUFFETT!"
