Pepperoni Pie

I should have posted this earlier in the season, but this is a recipe that's great for a football party.......yeah we still have the Super Bowl.

3/4 cup pepperoni, diced
3/4 cup Muenster cheese, cubed
3/4 cup flour
2 eggs
1 cup milk

Place all ingredients in a bowl. Stir with a slotted spoon til the batter is smooth except the lumps created by the cheese and pepperoni. Pour the batter into a greased pie plate. Bake in a preheated 400 degree oven for about 30 - 35 minutes, til firm (test with toothpick). Cut like a pie
6 - 8 pieces. Can be served hot from the overn, or cooled for about 20 minutes or so.

We often double the recipe and cook in a 9X13 pan and cut into squares for a larger crowd.

This is wonderful!

White Pizza Dip


1 envelope Lipton Recipe Secrets Savory Herb & Garlic soup mix
1 container (16 oz) sour cream
1 cup ricotta cheese
1 cup shredded mozzarella cheese

Preheat oven to 350. Mix everything in a bowl, saving 1/4 cup of the mozzarella for later. Pour into a shallow 1 quart casserole dish and sprinkle remaining mozzarella on top.

Bake uncovered for 30 minutes or until heated well. (I like to broil for a couple minutes at the end to get the cheesy top a little browned)

Serve with slices of lightly toasted (both sides) French Baguette bread.

You can also use pepperoni sticks to dip with.
