I have been to buffett shows before... but this time I will be the "host" of the tailgate. Jimmy is finally coming to tallahassee for the first time in at least 5 years if not 6 or 7 and with all the rumors of retirement this might be his last.

So I have a problem... What side dishes do I serve? Does anyone have any good recipies or ideas? I have been searching and searching. I just can't find anything that goes with the rest. The thing is... it will be cool that day. not freezing. but i think the high is maybe low 60s and cloudy. So I want something hardier... but nothing tooo much.

I am doing cheeseburgers because they are simple. I am also going to do some shrimp skewers with some sort of lime garlic marinade or earlier in the day boil up some shrimp in beer and old bay. Fresh guacamole with nellie and joe's (in fact key lime juice will be making an apperance all over) a mango salsa. I will be serving tortilla chips with those as well as possible those chili spiced little rounds you can get at freshmarket. Key lime tarts (you know in the mini muffin tins...) and some white chocolate and cranberry cookies for the sweet lovers. Also your typical home veggie platter (carrots, celery, cumumber, small tomatoes,). I am also considering a warm dip like a hot articoke dip (although its not really islandie)

Now that you know that is there anything yall can think of? I actually found this forum in my quest to find side dishes and this is my first post! I really appreciate ya'lls help. I know everything will be really easy and all do ahead of time. I have already spent too much valuable drinking time thinking about it... time to turn it over to the experts! :D

Some Fried Plaintains?? Baked??

How about some Fried Sweet Potato Chips or Fries??

Cheese Dip

1 small jar Helmans (must be this brand)
2 cups sour cream
2 cups finely shredded cheese (angle hair cheddar/mozzarella is best)
3 tablespoons grated Parmesan cheese
2 tablespoons garlic powder more or less to taste
3 tablespoons dried parsley

Mix well and stores for weeks (until sour cream date exp) Best if sits overnight.

Serve with crackers. My fav is rice crackers and wheat thins.

Enjoy....wish I was going to be there, menu sounds great.

The cheese dip sounds yummy. I am going to have to add that.

Also good call about the plantains.

I was also thinking of yuca... but im not sure its very available....

I think that is a little over my head! But if we had a big smoker or Pit we would be doing a large pig with mojo roast... but again... a little too much for my first hosted tailgate! :wink:
