My pleasure, Kitty.

I know how much you don't like them.
I wish I liked them...seems everyone does!
It's like shrimp...people think I am nuts that I hate them....I wish I could conform!

Although I love eggs and shrimp, I do understand why someone wouldn't like them. They have a strong flavor.
And for me? It's veggies and Jello.

Don't like them.

I like eggs most ways, but at Lucile's in Boulder (yummy creole-style breakfast with great beignets, chickory coffee and usually a line out the door waiting for a table) they make Eggs Jennifer (not named after me, but very coincidental!

) - like Benedict, but with spinach. Yum!

I like eggs all ways. Omelets, fried hard, over easy, benedict, scrambled, frittata, boiled (especially in spinach salads) and most of all...

deviled
I used to make my daddy a fried egg sandwich every morning. Bless his heart!

Just like I am with V-8 Juice... I have to be really in the mood,
which happens about once every 10 years, and even then they
have to be hard scrambled or a frittata (the eggs, not the V-8 ).
Never, ever try to make me eat a hard boiled egg yolk, unless
you want to end up wearing it (along with anything else in my stomach).
2-3 hard boiled eggs in a gallon of tuna salad is about all I can take.

I will definitely make a note of THAT!!
I love eggs, and basically anything else that is baaaad for me, it seems. At my monthly "brunch with the girls" I usually go for whatever variety of Eggs Benedict the restaurant offers. Owing to where I live, you can get Eggs Benedict made with duck, crabmeat, Smithfield ham (Jen? you listening?) or Canadian bacon. I love eggs.

Scrambled with lots of ingredients, or in an omelette.. with lots.
the Missouri River Diner in Great Falls: chorizo, jalapenos, green peppers, onions, mushrooms, tomatoes, and ham. 1-6 eggs..
there is no sense in paying the same price for 1 egg as 6... It truely was magic on that plate.
