You have to see the Alabama, that's #1 on any trip to Mobile. The Mardi Gras museum is small but very nice, a great history of the celebration and tons of king/queen costumes. When I was there we got a personal tour by the curator.
Bellingrath Gardens is beautiful, but now that it is summer it will be past the big peak of azeleas in bloom. Pensacola isn't too far away and the Museum of Naval Aviation at NAS P'cola is a great stop if you are into that sort of thing. Several of the old mansions are available to tour - Oakleigh comes to mind right off the bat.
Museum of Mobile is really interesting, and the Explorium is a nice science museum geared mostly to kids with a lot of hands on exhibits, but it also has travelling shows - Dead Sea Scrolls were there; I think the touring exhibit now is about life in Pompeii and includes some of the plaster body casts of the victims of Vesuvius.

I think the USS Alabama is not too far from there too (on the other side of the bay from the city if I remember correctly). There is an exit on I-10 for it.
If you want an experience, go to a Jimmy Buffett concert.
