Grab something that floats (even if it's your own belly) and catch some waves. This is the perfect time of year to ride a few nice swells.
Get your hands around a fishing rod and drown some worms. On a boat, a pier, or in the surf -- you'll have fun and maybe catch your best meal.
Point your eyes through some binoculars. There are birds on Pea Island, babes in Rodanthe, and boats off of Hatteras Village that bear a good look-see.
Ride the ferry.
Grab a sandwich and a beer at Howard's Pub.
Find the graves of British sailors down in Ocracoke. Leave flowers or just drink a toast at the nearest bar.
Play mini golf or ride a go-cart. (Buy some fudge for the folks back home.)
Watch the sun rise and set over the water on the same day, (preferably with a drink in your hand both times).
Make somebody's day.

Go to the Orange Blossom Cafe in Hatteras,
http://www.hatterasguide.com/orangeblos ... bakery.htm
Get a ham breakfast sandwich on a biscuit or their homemade bread. Or if you eat a whole lot get the giant breakfast sandwich.
Get an apple ugly. I prefer baked but most locals like the fried ones.
Go to The Pelican on Ocracoke during happy hour for some shrimp.
fly a kite if it's nice out.
Go out to the lighthouse at night. It's so cool then.

Go to the Dancing Turtle coffee shop. Talk to the owner who brings her dog into work. In the morning some of her friends bring their dogs by to visit. Owner and employees all seem to be married or dating local fishermen so you can get fishing info. Check out their pottery.
Go to the Red Drum Pottery. Nice stuff. Tell owner that all the NJ surfers in Christian Surfers say hi.

Some darn nice prose you put together. Write some more, combine 'em with some OBX photographs and you've got yourself a book I would buy.

Don't know if you've checked in yet but I forgot one.
Go to the Graveyard of the Atlantic Museum in Cape Hatteras. It's on the beach just past the ferry on the left. Here you can see the original Hatteras Fresnel Lense. You can also hear the story of the search for it, very similar to ASPAL. They have a wonderful bookshop with many pirate, lighthouse, and sea books.
While in Ocracoke go to the Blackbeard Museum. If you have kids or maybe if you don't take the 2.buck trip through the museum. Cheesy but fun. But yourself a cool pirate t-shirt here.
If you surf stop in Natural Art in Buxton. The employees and owners are great. Now that it's off season you can get a pair of reef flip-flops for a good discount. Buxton Munch in the shopping center there does a decent wrap.

I concur on these two (haven't gotten to the other mentions yet...)

I always love to plug the Graveyard of the Atlantic Museum. It's founded by mostly local people and a couple are ph's. They have a very limited budget and are working hard to build this museum off of donations. As much as money they want to see folks come in and enjoy and learn. They are very accessible.
Oh, go to Gingerbread House. If they are open now in the am they have good breakfast sandwiches. At night pizza. The last time I was there they were scaling back on hours.
Let me know the weather as I'm tentatively taking a trip in two weeks.
